Oven Baked Granola

Cook time: 30 minutes
Makes: 4-5 cups
Ingredients:
- 2 cups rolled oats
- 2/3 cups unsalted nuts or seeds (such as almonds, pecans, sunflower seeds or pumpkin seeds)
- 2/3 cups dried fruit (such as raisins or dried cranberries)
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 cup canola oil
- 1/4 cup honey
- 2 tablespoons brown sugar
- 1 teaspoon vanilla extract
Directions:
- Preheat the oven to 325 degrees F. Line a baking sheet with parchment paper (or spray with cooking spray).
- In a large bowl, mix the oats, seeds and dried fruit.
- In another bowl, stir together the cinnamon, salt, oil, honey, brown sugar, and vanilla.
- Pour the honey mixture over the oat mixture. Mix well to combine.
- Pour the mixture onto the prepared baking sheet. Spread it out evenly, but leave a few clumps.
- Bake for 10 minutes, then remove from the oven and use a metal spatula to lift and flip the granola.
- Bake for 10 more minutes, remove from the oven and use a metal spatula to lift and flip the granola.
- Bake for another 10 more minutes or until the granola is lightly browned and fragrant.
- Remove from the oven and let cool completely. Break apart large clumps. Store in an airtight container at room temperature.
- Serve with yogurt and fruit or eat as a breakfast cereal with milk.
