Oven Baked Granola



Prep time: 5 minutes
Cook time: 30 minutes 
Makes: 4-5 cups


 

Ingredients:

  • 2 cups rolled oats
  • 2/3 cups unsalted nuts or seeds (such as almonds, pecans, sunflower seeds or pumpkin seeds)
  • 2/3 cups dried fruit (such as raisins or dried cranberries)
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup canola oil
  • 1/4 cup honey
  • 2 tablespoons brown sugar
  • 1 teaspoon vanilla extract
     

Directions:

  1. Preheat the oven to 325 degrees F. Line a baking sheet with parchment paper (or spray with cooking spray).
  2. In a large bowl, mix the oats, seeds and dried fruit. 
  3. In another bowl, stir together the cinnamon, salt, oil, honey, brown sugar, and vanilla. 
  4. Pour the honey mixture over the oat mixture.  Mix well to combine.
  5. Pour the mixture onto the prepared baking sheet. Spread it out evenly, but leave a few clumps. 
  6. Bake for 10 minutes, then remove from the oven and use a metal spatula to lift and flip the granola. 
  7. Bake for 10 more minutes, remove from the oven and use a metal spatula to lift and flip the granola. 
  8. Bake for another 10 more minutes or until the granola is lightly browned and fragrant. 
  9. Remove from the oven and let cool completely. Break apart large clumps.  Store in an airtight container at room temperature.
  10. Serve with yogurt and fruit or eat as a breakfast cereal with milk.
