Orzo Vegetable Salad

Cook time: 15 minutes 
Makes: 4


 

Ingredients:

  • 1½ cups cooked orzo 
  • ½ medium zucchini, grated
  • ½ large carrot, grated
  • 5 fresh basil leaves, chopped
  • 6 cherry tomatoes, quartered
  • ¼ cup canned garbanzo beans, drained and rinsed
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon lemon juice (or juice of 1/2 lemon)
  • 1 tablespoon olive oil
  • ¼ teaspoon salt
     

Directions:

  1. Put all the ingredients in a mixing bowl and stir.
  2. Serve right away, or cover and refrigerate for up to 2 days.
     


Notes:

Orzo is a type of small pasta, shaped like a large grain of rice.
