Mint Carrot Salad



Prep time: 10 minutes
Makes: 1 1/2 cups


 

Ingredients:

  • 3 large carrots, scrubbed and peeled
  • Juice of one lime 
  • Grated zest of half a lime
  • 1/2 cup chopped fresh mint leaves
  • 1/3 cup roasted peanuts (optional)
  • 1 teaspoon honey
  • 1/2 teaspoon salt
     

Directions:

  1. Carefully grate the carrots on the large holes of the box grater and put them in a bowl. 
  2. Stir in the lime juice and zest, mint, peanuts, honey and salt.  
  3. Serve right away or cover and refrigerate up to 3 days.
