Mint Carrot Salad
Prep time: 10 minutes
Makes: 1 1/2 cups
Ingredients:
- 3 large carrots, scrubbed and peeled
- Juice of one lime
- Grated zest of half a lime
- 1/2 cup chopped fresh mint leaves
- 1/3 cup roasted peanuts (optional)
- 1 teaspoon honey
- 1/2 teaspoon salt
Directions:
- Carefully grate the carrots on the large holes of the box grater and put them in a bowl.
- Stir in the lime juice and zest, mint, peanuts, honey and salt.
- Serve right away or cover and refrigerate up to 3 days.
