Apple carrot salad with pineapple and yogurt



Prep time: 15 minutes
Serves: 3-4


 

Ingredients:

Salad:

  • 2 large apples
  • 1 cup canned pineapple tidbits
  • 1/3 cup carrots (1-2 large carrots)
  • 2 Tbsp. raisins

Dressing

  • 3 Tbsp. low-fat plain yogurt
  • 1/8 tsp. cinnamon

Optional topping - parsley
 

Directions:

  1. Wash the apples and remove the core. Chop apples into small to medium bite-size pieces.
  2. Wipe off the top of the can of pineapple, open the can and drain juice. Measure out 1 cup of pineapple.
  3. Wash, peel, and shred carrots with a box grater or food processor. Measure as you shred, and stop when you have 1/3 cup.
  4. Put all salad ingredients in a mixing bowl and mix.
  5. Add in dressing ingredients and mix gently.
